California restaurateur tries 2 concepts in one space

Restaurateur Andrew Gruel has opened two new concepts in Trade Food Hall in Orange County, Calif., that he expects to eventually co-brand nationally in a model similar to combined Taco Bell/Pizza Hut units. Chicken concept Two Birds serves locally raised Jidori chicken, and Butterleaf is a vegetarian concept that aims to convince meat eaters that plant-based meals can be filling.
